J.W.Anderson’s Book Might Be the Coolest Thing You’ll Read All Year

If you were to compile a list of the hottest designers in fashion, Jonathan Anderson would have to be really close to the top. The young Brit collected both the menswear and the womenswear prizes at the recent British Fashion Awards (“I was embarrassed because it must have looked maxi-greedy,” he told Business of Fashion) and between the chic ruffles and upbeat colors in his London-based signature line, J.W.Anderson, and his retooling of Spain’s luxury it-bags-and-more brand Loewe, he’s not just a designer and a creative director, he’s an international force.

Which is probably why Spain’s coolest publisher wanted to do a book with him. That volume, comprising 130 pages of collections, collaborations and more, was released yesterday at one of Anderson’s “workshops” (more on that in a moment) in the East End neighborhood of Shoreditch.

As Anderson said in the recent Business of Fashion article, he’s all about the pioneering early 20th-century Omega Workshops, which encouraged artists and writers and others to cross-pollinate and create and sell really killer work. It’s a concept that sounds a bit simple these days because we’re so accustomed to artist/brand team-ups and pop-up shops. But for Anderson, key to his adaptation of all that is exploring culture and personalization.

Sweet and Spicy: Chicken Wings Two Ways, Baked and Fried | What’s Cooking

Sweet and Spicy Baked Chicken Wings Recipe for a Party or Appetizers from Nordstrom. Photo by Jeff Powell.We’re sharing these two recipes as Super Bowl party menu ideas, but after tasting the knockout flavors in both dishes, you’ll want to make them more than just once a year. These chicken wings are perfect as finger-licking appetizers or main-course MVPs (we recommend serving them alongside rice and vegetables like blanched green beans).

In our first recipe for baked chicken wings, Sriracha and a couple tablespoons of ground Tellicherry peppercorns get things fired up but are sweetly balanced by a mouthwatering caramel glaze. Our second recipe calls for frying the chicken wings. In this dish, even more black peppercorns lend their heat to an Asian-inspired sauce with ginger and shallots. A quick toasting of the peppercorns and a final addition of just a bit of coconut milk mellows any overly pungent spice in a surprisingly mild but still peppery sauce that gets tossed with the crispy-skinned wings.

Black Pepper and Caramel Chicken Wings
From our Nordstrom Flavors Cookbook
(Serves 6)

Ingredients
4 pounds chicken wings
1 1/2 cups homemade or store-bought caramel sauce
1/3 cup soy sauce
3 tablespoons Sriracha chile sauce
1 tablespoon kosher salt
2 tablespoons freshly ground Tellicherry peppercorns
5 cloves garlic, finely minced
Vegetable-oil cooking spray for preparing the rack

Using a cleaver or heavy knife, cut each wing at its three joints. Set aside the drumettes and second joints for this recipe, and reserve the wingtips for another use (such as making stock) or discard.

In a small bowl, whisk together 3/4 cup of the caramel sauce, the soy sauce, chile sauce, salt, peppercorns and garlic to make a marinade. Place the chicken in a lock-top plastic bag and pour in the marinade, coating the wings evenly. Squeeze the air out of the bag and seal it. Refrigerate for at least 12 hours or up to 24 hours, turning the bag occasionally.

Preheat the oven to 375°F. Line a large rimmed baking sheet with aluminum foil. Place a large wire rack on the baking sheet and coat with cooking spray.

Put the wings in a colander to drain off the excess marinade, and then arrange them on the rack on the baking sheet. Roast until the skin is crispy and a deep mahogany and the meat has begun to pull away from the bone, 35-40 minutes. Remove from the oven and transfer the wings to a large bowl.

Drizzle the wings with the remaining 3/4 cup caramel sauce and toss. Return to the rack on the baking sheet and cook until the wings are freshly glazed, about 6 minutes. Transfer the wings to a serving platter, let cool just slightly and then serve.

Chef’s Note: Tellicherry peppercorns, named for a town in India, are renowned for their fruity, fragrant bouquet, with a depth of flavor and pungency that no other peppercorns can deliver. They owe their superior reputation in part to the fact that they are usually picked from the top of the vine, where they grow larger than they do on the lower area. Do as we do in our restaurants and grind peppercorns as they are needed, keeping their essential oils locked inside until the last second.

For the best results, chop fresh chicken wings for this dish, as frozen drumettes give off too much water when roasted, diluting the mouthwatering glaze.

Spicy Black Pepper Chicken Wings
From our Nordstrom Family Table Cookbook
(Serves 4)

Ingredients
3 tablespoons black peppercorns
1 tablespoon canola or vegetable oil
1/4 cup minced shallots
1/4 cup peeled and minced fresh ginger
6 cloves garlic, minced
2 tablespoons red wine vinegar
1/2 cup soy sauce

Canola oil for deep-frying
16 chicken wings, chopped apart at the joints, wingtips discarded
1/4 cup canned coconut milk, well shaken
Kosher salt
1 small red jalapeño chile, cut into thin rings

To make the Black Pepper Sauce, heat a medium skillet over medium heat. Add the peppercorns and cook, stirring occasionally, until you see a wisp of smoke and they smell very fragrant, about 1 minute. Transfer to a plate and let cool. Grind the peppercorns in an electric spice grinder or with a mortar and pestle to the consistency of fine sand.

Heat 1 tablespoon canola oil in a medium skillet over medium-low heat. Add the shallots, ginger and garlic. Cover and cook, stirring often, until tender, about 10 minutes. Increase the heat to high. Add the vinegar and cook, uncovered, until the vinegar evaporates, about 1 minute. Add the soy sauce and boil until reduced by half, about 3 minutes. Stir in the pepper and cook until slightly thickened, about 1 minute. Remove from the heat.

Position a rack in the center of the oven and preheat the oven to 200°F. Line a baking sheet with a brown paper bag.

Pour enough canola oil into a large, deep saucepan to reach 3 inches up the sides, then heat to 350°F on a deep-frying thermometer. In batches, without crowding, add the chicken wings and cook until golden brown and cooked through, about 3 1/2 minutes. Using a wire-mesh skimmer or slotted spoon, transfer the wings to the oven pan. Keep warm in the oven while frying the remaining wings.

Just before serving, whisk the coconut milk into the black pepper mixture and reheat over medium heat. If the sauce is too thick, gradually stir in water, 1 teaspoon at a time, as needed. Transfer the wings to a large bowl. Add the sauce and toss to coat. Sprinkle a light dusting of salt over the wings.

Garnish with jalapeño rings and serve.

Roasted Pineapple with Vanilla Bean Spikes and Caramel (And an Infused-Vodka Bonus) | What’s Cooking

As I was thumbing through our Nordstrom Cookbooks looking for potential recipes to share, I stumbled across this crazy stunner. At first, I thought it looked like a kind of atomic centerpiece I’d imagine you could have seen at at ’50s cocktail party, sitting next to some sort of bright green, molded gelatin salad brimming with olives and tuna. I was hooked—at least on the mid-century cocktail party part. And then I thought a little more. Studding a pineapple with vanilla beans and roasting it in an oven until tender while periodically basting it with caramel really couldn’t be a bad idea, no matter the era.

Turns out, it definitely isn’t. Roasting the pineapple concentrates its flavor while bringing out its sweetness…along with a little help from that creamy caramel. Basting while cooking ensures it doesn’t dry out, and also distributes those beautiful vanilla-bean-seed specks all over the surface. This is something you present before serving to ensure maximum oohs and ahhs, and then we recommend serving the carved, roasted pineapple on a couple scoops of vanilla bean ice cream topped with a generous drizzle of the vanilla-caramel pan juices.

It takes a little finessing to carve out the ‘eyes’ of the pineapple to achieve those impressive swirling grooves, but it’s worth the fuss–and also provides more surface area and basting channels to facilitate maximum caramelization and flavor. While a great pineapple is easy and inexpensive to get your hands on, vanilla beans can be more of a splurge. To extend their life, keep reading to the very end: our chefs offer up a genius way to make use of the roasted beans with a delicious vanilla-pineapple-infused vodka recipe (fancy tropical adult beverages!), which lasts for months.

Roasted Pineapple with Vanilla ‘Spikes’
From our Nordstrom Flavors Cookbook
(Serves 6 to 8)

Ingredients
3/4 cup homemade or store-bought caramel sauce
1 ripe pineapple, preferably jet fresh
4 vanilla beans, split lengthwise, then cut into thirds to make 24 pieces total
Vanilla bean ice cream for serving

Position a rack in the lower third of the oven (with enough room left over to clear the height o the pineapple and its trimmed top) and preheat oven to 450°F. In a small bowl, mix together the caramel sauce and 2 tablespoons of water; set aside.

Lay the pineapple on it side. Using a sharp knife, and cutting away from you, carve the leaves into a cone shape about 3 inches high. (Editor’s Note: I found it easiest to start with kitchen shears to begin the cone and then do the final shaping with a sharp knife.) Cut off the bottom of the pineapple so the fruit will stand straight up. Stand the pineapple upright and carefully pare away the outer skin. Remove the ‘eyes’ by grooving channels into the pineapple, working in a diagonal, like the strips on a barber pole.

Using a paring knife, cut 24 equally spaced, 2-inch-deep slits all over the pineapple. Insert a vanilla piece into each slit, leaving 1/2 inch of the vanilla visible. Wrap aluminum foil around the trimmed pineapple leaves to protect them in the oven. Stand the pineapple upright in a 9-inch round cake pan. Brush the pineapple with some of the caramel sauce.

Roast the pineapple for 15 minutes. Reduce the temperature to 400°F. Every ten minutes, baste again with the caramel sauce and continue roasting, for about 60 minutes or until the pineapple is nicely browned and easily pierced with a long metal or wooden skewer.

Carefully remove the pineapple from the oven and let cool for about 15 minutes. Reserve the sauce that has collected in the pan. Using a wide, stiff spatula, transfer the pineapple to a serving platter. Unwrap the foil from the top.

After spooning the accumulated pan drippings over the pineapple, present it at the table in all of its spiky glory. To serve, return to the kitchen and remove the vanilla-bean segments (save them for the vodka infusion recipe). Transfer the pineapple to a cutting board to cut off and discard the top, and then cut the pineapple lengthwise into wedges. Cut the solid core away from each wedge, and then cut the wedges into chunks. Scoop the ice cream into individual bowls, and top with the warm pineapple chunks and pan juices. Serve immediately.

Le Creuset Mini Cocottes

Chef’s Note: There is no reason to toss out the vanilla-bean segments used in this recipe (they are a luxury). Instead, use them to make a pineapple-and-vanilla-infused vodka. In a 1-quart jar, combine the vanilla pieces and 2 cups fresh pineapple chunks. Add enough vodka to cover the pineapple and vanilla completely. Cover and refrigerate at least 1 week before serving. The pineapple-vanilla infused vodka mixture will keep for up to 2 months. To use, strain off only what you need.
